Update - Global Challenge

Staff participating in the Global Challenge are now into the 35th day, and the team members have been putting in some fairly big days, averaging nearly 21,000 steps daily each (or 13km daily). The virtual walk has so far has taken the team through Indonesia, across Asia and Russia, and they are now in Sweden, at Mariestad. The team is currently in second place, just behind an Australia Post team, which is also at Mariestad. Another Australia Post team is in third place, but is 3 checkpoints behind, at Stockholm. The
team members have walked 3,266 km between them already, and are hoping
to close in on the leader with some big walks over the weekend.

Jill Grogan – Monash Health Service
Margaret Croxford – Faculty of Information Technology

Art Education Victoria Conference

The Faculty of Art & Design hosted Art Education Victoria’s Annual Conference Essentially Art over Sunday 5 and Monday 6 June 2006. Approximately 150 delegates from across the state attended and enjoyed use of the Faculty’s buildings and facilities.

Art Education Victoria was established to advance art education, uphold and proclaim the higher values of art education, protect the intellectual freedom and integrity of art educators, provide a forum for art educators and sponsor and support activities, research and publications which will assist art educators.

The annual conference is held to engage participants in a variety of theoretical and practical workshops that will expand their development as art educators.

Hosting the conference gave the Faculty of Art & Design the perfect opportunity to highlight all it has to offer both for students of the teachers present, as well as anyone interested in postgraduate education.

Course coordinators and Department heads joined the delegates for lunch on Monday 6 June so the teachers could meet and mingle with Faculty staff and learn more about the courses available. A trade show of art providers was also held in the foyer of the Art & Design building.

Campus Nurse Report

Here is Judy Evans' report for this month:

Healthy Eating Tip

There has been a lot written about the longevity benefits of a Mediterranean diet.  This food pattern is characterised by a high intake of vegetables, legumes (dried beans) fruits and cereals; a moderate to high intake of fish; a low intake of saturated fats but a high intake of monounsaturated fats; particularly olive oil; a low to moderate intake of dairy products, mostly cheese and yogurt; a low intake of meat; and a modest intake of ethanol, mostly wine.

 Traditional Greek Chickpea soup

1 can of chickpeas (drained)

3 small celery sticks & leaves, chopped

1 carrot, chopped

1 zucchini, chopped

½ red capsicum, chopped

½ cup finely chopped sweet potato or pumpkin

½ cup chopped parsley

1 cup shredded cabbage

1 large onion, chopped

5 cloves garlic, chopped

1 litre of low salt vegetable stock

1 teaspoon dried oregano (end of cooking)

1/3 cup of extra virgin olive oil (end of cooking)

juice of one lemon (end of cooking)

Heat the stock, add all the ingredients, simmer for 30-40 minutes, add oregano, olive oil and lemon juice. Then serve.

If soup is too chunky use a hand blender to blend the soup for a couple of seconds to thicken it.  Serve with wholegrain toasted bread, olives, reduced fat fetta, sardines and a glass of wine.   The perfect Mediterranean styled food.

At least one legume dish a week is desirable.  This recommendation is based on the frequency of intake of long-lived populations in the Mediterranean and in Asia.  More than this weekly frequency is recommended for vegetarians or for people who avoid red meat.  Legumes/soy are a ‘meat alternative’ – this means that when you have, for example, baked beans on toast, it counts as a  ‘serving of red meat’.

Round the Bay in a Day

Last year Monash had 109 riders entered in the Round the Bay in a Day event and this year's aim is to boost that involvement, particularly students, this year. The event supports the Smith Family - Learning for Life program - providing help to disadvantaged families to keep kids at school in order to break poverty cycles.

Monash Sport is supporting cyclists, students and staff, from across all
campuses in the Around the Bay rides to be held on Sunday 16th Oct 2005.
There are options for all cycling fitness levels. Distances are: 50km,
100km and the 210Km "Classic"
